I’m not here to tell you that gardening is easy. It’s not, it takes work, determination, drive, and effort. I do want to share with you 11 of the Easiest Vegetables to Grow in Your Garden. Those vegetables that won’t die easily. Of course, there is a chance of failure. I’ve failed many times. But, I’m sharing with you the vegetables that I have experience with and that have grown well for me.

Start These Vegetables as Plants
I’m going to start out sharing the vegetables that I usually buy as plants because they are hard to start from seed. You can start these plants from seed, but you will need to start them inside around February or March under a grow light.
Tomatoes
They come in all sizes, colors, shapes, and flavors. Tomatoes are probably my favorite plant to grow and they are easy. I love a fresh off the vine tomato with a little salt. Making fresh salsa in the Summer is one thing that makes my whole family happy. I also enjoy canning them. For an easy start, go to a greenhouse and buy tomato plants.
Pepper Plants
These plants are much easier to start in your garden as plants. As with tomatoes, they come in a large variety including heat. I usually plant bell peppers and jalapenos in my garden, but there are many possibilities. They grow very easily in most gardens, even in raised beds. I usually store extra peppers in the freezer to use throughout the year.
Vegetables/Fruit to Start from Seed
Most plants for my vegetable garden I start from seed in my raised beds. I’m going to share the ones that I have the most success with.
Zucchini/Yellow Squash
I’ve grown zucchini and yellow squash for years, even when I lived in town. They are my number one favorite easy vegetable to grow. Maybe it’s the climate or the soil, but I’ve never had issues with these vegetables. As long as you don’t count squash bugs. They are relentless on squash.
Spinach
Spinach is a Spring or Fall plant. Spinach grow easily in my garden until the Oklahoma heat kicks in. You can replant in the fall when the weather cools off. Spinach can also be grown in a pot inside your home.
Carrots
Carrots are simple to grow from seed. Just plant in well-draining soil, water regularly, and let them grow. Plant seeds every two weeks for a continuous crop.
Pumpkins
Pumpkins have always been easy for me to grow. They will grow wild on our land when the seeds are left behind from the pumpkins we feed the chickens. First, you will need space for your pumpkins. Since we use raised beds from gardening, we usually let the vines climb over the fence.
Radishes
Radishes are so easy to grow and are great in salads. They will give your salad an extra punch.
Cucumbers
Cucumbers are a pretty versatile vegetable. They can be pickled, made into salads, or eaten with only a bit of salt. Cucumbers are a forgiving vegetable, making them easy to grow.
I usually grow pickling cucumbers, because I like to pickle them. There are several varieties to choose from. You can let the vines spread across your garden, or make a trellis or fence for them to climb. They like well-drained soil with nutrients, such as compost.
Okra
Okra loves heat. That is one reason it is easy to grow in my area. They love rich well-drained soil but will tolerate poor soil. Okra is prickly, so use gloves when harvesting. I love frying, freezing, and pickling okra. The family loves it fried and pickled.
Potatoes
Potatoes are super easy. They don’t start from seed, they start from another potato. I’ve grown mine in raised beds and in tubs. Potatoes make a great side and are very versatile.
Onions
I grow onions from sets. This is also different from seeds. Onions like well-drained soil and have never given me a problem to grow. I like adding my onions to fresh and canned salsa.
