We always have lots of squash in the Summer from our garden. Easy Skillet Squash and Bell Pepper in Butter is based on a recipe my mother used to make. I usually just throw it together and never thought much about a recipe. We really like batter and fried squash, but that recipe is a lot of work and dirty dishes and this recipe is similar but easier, less greasy, and less messy. That’s a good reason to turn it into a dinner staple in the summers! Even my youngest will eat this, and you probably know how picky 5-year-olds can be. If you love fried squash but are not a fan of the oil and grease, this is the perfect recipe for you!
Garden Problems
Every Summer we seem to battle a variety of things that threaten our produce. Usually, it is squash bugs! Those things are nasty and reproduce like crazy. Trying to keep our garden organic is nearly impossible when battling squash bugs. This Summer we have been plagued by grasshoppers! I am not kidding, it is literally a plague! Millions of grasshoppers, they cover the ground, hop on us when we walk outside and have nearly destroyed my garden. I have one lonely squash plant that has survived, some cucumber plants, tomato plants, and pumpkin vines. The tomato plants have not produced yet, and I’m afraid if they do, they will be devoured by the grasshoppers.
To look on the positive side I guess I should count my self lucky to have at least one squash plant and that I’m still able to create new recipes over the Summer. This delicious skillet squash recipe is meant as a side dish, so it does not make a lot but enough for 3-4 servings.
Saute squash until tender
Add flour mixture
I forgot to add the bell pepper at the beginning! Flip, then Saute until golden brown
Saute the other side until golden brown, then serve warm.
Easy Skillet Battered Squash and Bell Pepper in Butter
Ingredients
- 2 small yellow squash slice
- 1/4 green bell pepper diced you can use more, less or no bell pepper
- 2 Tblsp Butter
- 1/2 C flour
- 1/2 C corn meal
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt & pepper to taste
Instructions
- Melt butter in large skillet over medium heat. Add squash and bell pepper and saute until soft, flipping to suate both sides. Mix the remaining ingredients together, pour about half of the flour mixture over the top of the squash and peppers coating as evenly as possible. Flip ove squash and peper to reveal the uncoated side. Pour flour mixture over the squash using all or as much as you need to cover the squash. Let it saute until golden brown on the bottom side, then flip over to saute the other side. Serve warm.
